as promised…
so i promised my totally page girls that i would put up a couple of recipes of the food that i brought in….here they are as promised!
Peanut Butter Cookies
5 1/4 cups flour
2 tsp baking soda
1 tsp salt
1 cup butter
3/4 cup shortening
1 3/4 cups sugar
1 3/4 cups brown sugar
4 eggs
2 tsp vanilla
3/4 cup peanut butter
24 mini peanut butter cups
grease cookie sheets and set aside. In medium bowl, mix flour, baking soda, and salt; set aside.
in large mixing bowl, cream butter, shortening,sugar, brown sugar, eggs, and vanilla. stir in peanut butter.
add flour mixture and stir until well blended.
drop dough onto the cookie sheets and press with fork for a criss cross.
bake at 350 degrees for 7 minutes…don’t over cook!
take cookies out while still warm and press the mini peanut butter cups in. refrigerate
Zucchini Bread
3 cups flour
1 tsp baking soda
1/2 tsp baking powder
3 tsp cinnamon
3 eggs
1 cup of oil
2 cups sugar
1 tablespoon vanilla
2 coups zucchini, grated
1 cup walnuts chopped
grease 2 small 7×3″ loaf pans and set aside. In a large bowl, mix flour, baking soda, baking powder, and cinnamon. Set aside
In separate mixing bowl, beat eggs until light and foamy. Add oil, sugar, vanilla, and zucchini, mix well.
Add flour mixture just until moist. (overmixing causes tunnels and a course texture) Fold in nuts
Pour into pans about 2/3 full. Bake at 325 degrees for 45-40 min.
